marinara or pizza sauce

2 cups

shredded mozzarella-provolone cheese blend

1 cup

bell peppers, thinly sliced

1/2 cup

red onion, thinly sliced

1 package

grated Parmesan cheese, for garnish

salt, to taste

Directions

  1. Heat oven to 350°F. Line a baking sheet with parchment paper. Arrange bagel halves cut-side up on the prepared baking sheet.

  2. Spread an even layer of marinara or pizza sauce over each bagel half.

  3. Sprinkle evenly with the shredded cheese, then top with sliced bell peppers, red onion, and sausage. (Placing the sausage on top helps it get extra crispy.)

  4. Finish with a light sprinkle of Parmesan cheese and a pinch of salt.

  5. Bake for 20 minutes, or until the cheese is melted and golden brown. Serve warm.

  6. To freeze, assemble bagels but do not bake. Freeze in a single layer on a baking sheet until solid, then transfer to a freezer-safe bag. Bake from frozen at 350°F for 20–25 minutes, or until heated through and bubbly.
