Ingredients
- 12 Jones Dairy Farm Golden Brown All Natural Turkey Sausage Links, frozen
- 1/4 cup water
- cooking spray or oil, for greasing
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon fine salt
- 2 eggs
- 3/4 cup nonfat plain Greek yogurt
- 1/4 cup milk
- 2 tablespoons maple syrup
- 1 tablespoon unsalted butter, melted
- 1 teaspoon vanilla extract
Directions
Place the turkey sausage links in a covered skillet over medium heat and add the water. Cover and heat for 3-4 minutes, turning occasionally, until fully heated through. Transfer to a cutting board, and slice the links in half. Set aside.
Heat oven to 350°F. Grease a 12-cup muffin tin with cooking spray or oil.
Whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt in a large bowl.
Whisk the eggs, Greek yogurt, milk, maple syrup, melted butter, and vanilla extract in a separate medium bowl until smooth.
Add the wet ingredients to the dry ingredients and whisk until just combined.
Divide the batter evenly among the muffin cups, then add 2 pieces of the cut sausage links in each, pushing them down slightly into the batter.
Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean.
Let them cool for 5 minutes before serving with more maple syrup for dipping, if desired.
