
Turkey Sausage Spaghetti Squash Boats
Low-Carb, High-Flavor Weeknight Dinner
This hearty, wholesome meal features spaghetti squash filled with a savory mixture of Jones Dairy Farm No Antibiotics Ever Turkey Sausage, sautéed vegetables, and marinara. 1 medium or large | spaghetti squash |
1 cup | water |
2 tablespoons | olive oil, avocado oil, or coconut oil |
2 (7 oz.) packages | Jones Dairy Farm No Antibiotics Ever Turkey Sausage Links, cut into bite-size pieces |
1 small | onion, diced |
3 cloves | garlic, minced |
1 | red bell pepper, diced |
1 teaspoon | Italian seasoning |
crushed red pepper flakes (optional) | |
5 oz. | fresh baby spinach, chopped |
1 cup | sugar-free marinara sauce |
2 tablespoons | nutritional yeast (or 3 tablespoons Parmesan cheese) |

Spaghetti Squash in an Instant Pot:
Cut squash in half lengthwise, scoop out seeds and strings. Place steamer basket or trivet in bottom of Instant Pot. Add 1 cup water.

Place squash in pot. Cover, cook on high pressure for 6-8 minutes (6 minutes for a smaller squash, 8 for large and 7 for a medium/large squash). Quick release pressure and transfer squash to a plate to cool.

Spaghetti Squash in an Oven:
Preheat oven to 425 degrees Fahrenheit. Cut squash as described above, place face down on foil lined baking sheet. Bake in preheated oven for 25 minutes or until top of squash is tender when pressed gently.

Filling:
If using Instant Pot, wait for the squash to finish cooking. If using stove-top, make the stuffing while the squash cooks. For both methods, heat the pot or skillet over medium heat (sauté on high for Instant Pot.). Add oil, then add sausage and sauté until browned, stirring as needed.

Add in onions and sauté until translucent. Add peppers and garlic. Stir, sprinkle with salt, pepper, crushed red pepper and Italian seasoning.

Cook and stir until softened, add spinach and stir until wilted. Add marinara and nutritional yeast or Parmesan. Continue to cook about 3 minutes to heat through and blend flavors, then remove from heat.

Scrape spaghetti squash vertically to create the spaghetti, fill with turkey sausage mixture. Scoop out onto plates to serve or dig into the squash! Enjoy!
