Boneless, skinless chicken breasts, cut into bite-sized pieces

1 package

Jones Dairy Farm Canadian Bacon, diced (reserve 2 slices for topping)

2 cloves

Garlic, minced

2 tablespoons

Dijon mustard

1 teaspoon

Garlic powder

4 cups

Chicken broth

1 cup

Milk

1 package (1 pound)

Penne pasta

2 cups

Shredded Swiss cheese

Salt and pepper to taste

Fresh parsley

Topping:

1/3 cup diced Canadian Bacon (from reserved slices)

1 cup shredded Swiss cheese

Directions

  1. Heat olive oil in a large Dutch oven or pot over medium heat. Add chicken pieces and cook until browned on all sides.

  2. Stir in diced Canadian Bacon, garlic, Dijon mustard, salt, garlic powder, and pepper. Cook for an additional 2 minutes.

  3. Pour in chicken broth and milk; bring to a simmer. Add pasta and cook covered for 8 minutes. Uncover and cook for an additional 2 minutes, or until pasta is al dente.

  4. Once the pasta is cooked, stir cheese until melted and creamy.

  5. Divide pasta between bowls. Top with crumbled topping and fresh parsley.

  6. Topping:

    Heat oven to 400 °F. Line a baking sheet with parchment paper.

    Spread cheese on baking sheet and sprinkle with Canadian Bacon. Bake 5-8 minutes, or until golden brown. Let cool and crumble.
