BLT with Bacon Guacamole starts with Jones Dry Aged Bacon cooked until crispy, then puts it to work twice — two slices crumbled into a homemade guacamole and three slices layered on the sandwich. Piled on toasted sourdough with lettuce and tomato, this bacon guacamole BLT recipe serves two and comes together in just 15 minutes. A classic sandwich that earns its upgrade.
Ingredients
- 8 slices Jones Dairy Farm Dry Aged Extra Thick Cut Bacon
- 2 avocados, halved, seeded and peeled
- 3 tablespoons red onion, minced
- juice of 1 lime
- salt and pepper to taste
- 4 slices sourdough bread, toasted
- 2 leaves green leaf lettuce
- 1 tomato, thinly sliced
Directions
Heat large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to paper towel-lined plate to cool. Crumble 2 slices bacon; reserve remaining 6 slices.
In small bowl, gently mash avocados using potato masher or fork. Add crumbled bacon, red onion, cilantro, lime juice, salt and pepper, and gently toss to combine; set aside.
To prepare sandwiches, spread one slice of bread with avocado mixture; top with 3 slices bacon, 1 lettuce leaf, tomato and bread. Repeat for second sandwich.
