Cream Cheese (for savory)

2 tablespoons

Finely Chopped Red Bell Pepper (for savory)

2 tablespoons

Finely Chopped Green Onion (for savory)

1/2 teaspoon

Dried Parsley (for savory)

1/2 teaspoon

Garlic Powder (for savory)

Kosher salt and pepper, to taste (for savory)

No-Fat Ricotta Cheese (for sweet)

Directions

  1. For Savory Skewer Bites:
    Toss tomatoes and fresh mozzarella with olive oil and fresh herbs, set aside.

  2. In medium sized mixing bowl add ricotta cheese, cream cheese, red bell pepper, green onion, parsley, garlic powder, salt and pepper. Using a hand held mixer, mix on medium speed until smooth. If the mixture is too thick to pipe, thin out with a little heavy cream or half and half until desired consistency is met. Place spread into a plastic bag or piping bag and cut tip off with a sharp kitchen shears.

  3. Cut a wedge out of each slice of Canadian ​Bacon (roughly 1/6th of the Canadian bacon slice). Take one slice of Canadian ​Bacon (with wedge cut out) and roll into a cone shape, overlapping the edges so there is no gap in the cone and no hole on the bottom. Pipe cheese spread into Canadian Bacon cone, filling almost to the top. Place a marinated tomato on top of the cheese and press down slightly.

  4. Take skewer and run horizontally through middle of the cone so that it stays closed. Repeat using fresh mozzarella instead of tomato. Repeat a third time, using a tomato. Each skewer should have 3 cones, 2 with tomatoes on the outside and one with mozzarella on the inside. Drizzle with balsamic vinegar. Repeat for remaining skewers. Makes 8 skewers.

  5. For the Sweet Skewer Bites:
    Place ricotta cheese into plastic bag or piping bag and cut tip off with sharp kitchen shears.

  6. Cut a wedge out of each slice of Canadian ​Bacon (roughly 1/6th of the Canadian ​Bacon slice). Take one slice of Canadian ​Bacon (with wedge cut out) and roll into a cone shape, overlapping the edges so there is no gap in the cone and no hole on the bottom. Pipe ricotta cheese into Canadian ​Bacon cone, filling almost to the top. Place a cantaloupe ball on top of the cheese and press down slightly.

  7. Take skewer and run horizontally through middle of the cone so that it stays closed. Repeat using a cherry. Repeat a third time, using a honeydew melon ball. Each skewer should have 3 cones on it, one with each of the fruits.
