

Grilled Zucchini Pizza Boats
Pizza Night Without the Crust (or the Guilt)
These Grilled Zucchini Pizza Boats give you all the flavors of pizza night with none of the dough. Hollowed zucchini halves are loaded with pizza sauce, shredded mozzarella, dollops of ricotta, and sliced Jones Dairy Farm Golden Brown All Natural Turkey Sausage Links, then grilled until the cheese is bubbly. Bake or air fry if you don’t have a grill. Either way, dinner is on the table in 20 minutes.
Ingredients
- 3 medium zucchinis
- 1/2 cup pizza sauce
- 1 cup mozzarella cheese, shredded
- 6 tablespoons ricotta cheese
- neutral cooking oil, for brushing
- salt & pepper, to taste
- additional pizza toppings: peppers, olives, pineapple, mushrooms, etc.
Directions
Slice turkey sausage links into rounds and heat according to package directions.
Trim the ends off the zucchini and cut in half lengthwise. Remove the seeds, brush with oil and season with salt and pepper.
To Grill: Preheat grill to high heat.
Grill zucchini halves over high heat for 3-5 minutes, just until the begin to soften. (Skip this step if using an oven)
Add pizza sauce, shredded mozzarella cheese, sliced Jones Dairy Farm Turkey Sausage Links, and chosen pizza toppings to the center of each zucchini half. Top with scoops of ricotta cheese.
Put the zucchini pizza boats back on the grill for 5-10 minutes, until the cheese has melted. Garnish with fresh basil, if desired.
To Bake: Preheat oven to 425º F.
Bake zucchini pizza boats on baking sheet for 12-14 minutes, or until cheese has melted.
To Air Fry: Preheat to 390º F for 5 minutes.
Add the zucchini pizza boats 2-3 at a time and cook for 8 minutes.
