1 cup | milk |
1 pound | penne pasta |
2 cups | shredded Swiss cheese |

Directions

Heat olive oil in a large Dutch oven or pot over medium heat. Add chicken pieces and cook until browned on all sides.

Stir in diced Canadian Bacon (reserving 1/3 cup for topping), garlic, Dijon mustard, garlic powder, salt, and pepper. Cook for 2 minutes.

Add chicken broth and milk; bring to a simmer. Stir in pasta and peas (or broccoli, if using). Cover and cook for 8 minutes.

Uncover and cook an additional 2–4 minutes, or until pasta is al dente and peas are tender.

Reduce heat to low and stir in 2 cups shredded Swiss cheese until melted and creamy.

Divide pasta between bowls, top with cheese-bacon topping (see below), and garnish with fresh parsley.

Preheat oven to 400°F. Line a baking sheet with parchment paper.

Spread 1 cup shredded Swiss cheese on the baking sheet and sprinkle evenly with reserved Canadian Bacon.
