FAQs

Yes. Jones Dairy Farm’s Cherrywood and Hickory Smoked Bacon lines are dry aged, a process that removes excess moisture and concentrates flavor for a richer, more authentic bacon taste. Unlike many commercial bacon producers that brine chill their bacon, Jones air chills its bacon after smoking — resulting in a cleaner flavor, better yield, and less shrinkage during cooking.

Cherrywood smoking is a method of slow smoking meat using chips of cherrywood, a fruitwood known for producing a mild, sweet smoke. Unlike stronger hardwoods like hickory or mesquite, cherrywood imparts a subtle, slightly sweet smokiness that complements the natural flavor of the meat without overpowering it. Jones Dairy Farm smokes bacon for over 8 hours.

Center cut bacon comes from the middle section of the pork belly, which produces strips with a higher ratio of meat to fat compared to standard bacon cuts. The result is a leaner, more uniform slice that cooks more evenly. Jones Cherrywood Smoked Dry Aged Bacon is center cut, meaning you get less fat and more of what makes bacon worth eating.

Dry aged bacon is bacon that has been cured and aged in a controlled environment without the use of added water or liquid brine. During the dry aging process, moisture is drawn out of the meat naturally, which concentrates the flavor and improves the texture. The result is a richer, more complex bacon than what most people are used to. Jones Dairy Farm dry ages bacon for up to three weeks.

Yes. Jones Cherrywood Smoked Dry Aged Bacon is Certified Gluten-Free, meaning it has been independently verified to meet strict gluten free standards. It is also free from the Big 9 allergens, making it a safe choice for households managing multiple food sensitivities.

Most commercially produced bacon is wet cured, meaning it’s injected with a brine solution to speed up the curing process and add weight. Dry aged bacon skips the added liquid entirely, relying on time and controlled conditions to develop flavor naturally. The difference shows up in the taste, texture, and the way it cooks — dry aged bacon renders more cleanly and delivers a bolder, more authentic flavor.

Being Certified Gluten-Free means added assurance for customers looking for safe and reliable gluten free products. We chose to partner with the Gluten-Free Food Program (GFFP) because they have the most strict and comprehensive certification program in the industry. This requires all certified products be tested and contain 5ppm (parts-per-million) or fewer of gluten.

GFFP’s strict guidelines ensure members of the celiac community and those who require gluten free products for other health reasons have products they can trust.
