ingredients

For Bourbon Bacon Jam

3 strips Jones Dairy Farm Bacon, cut into small pieces
1 small sweet onion, finely diced
3-4 cloves garlic, finely minced
2/3 cup apple cider vinegar
5-6 tablespoons brown sugar
5 tablespoons Bourbon
5 tablespoons water
Pinch of cayenne pepper
Cracked black pepper, to taste

For Stackers

Olive Oil
2 pounds ground beef
1 small sweet onion, peeled and finely chopped
1 tablespoon heavy cream, optional
Salt and pepper, to taste
Green leaf lettuce
1 large, ripe tomato, thickly slicked
4 slices American cheese
Mayo, optional

DIRECTIONS

For Bourbon Bacon Jam

Sauté bacon pieces in large skillet over medium heat until crispy. About 8-12 minutes. Drain onto paper towel-lined plate. Return to pan. Add onion and garlic, cook until soft and tender. About 3-5 minutes.

Add remaining ingredients. Stir to combine. Bring to boil, simmer, stirring occasionally until liquid is mostly cooked off. About 10-15 minutes. Set aside.

For Stackers

In large mixing bowl, add ground beef, onion, heavy cream, salt and pepper. Use hands to mix gently.

Form 4 patties, making indentation in center of each to ensure even cooking.

Drizzle olive oil in large skillet over medium heat. Cook patties 5 minutes per side, or until desired doneness.

Last minute of cooking, place cheese slices on patties. Cover pan with aluminum foil.

To assemble, place lettuce leaf on plate. Add mayo. Stack tomato, burger, and scoop of bacon jam on top.

**Bacon jam may be stored in airtight container in refrigerator up to two weeks.
