Transform your ordinary meatloaf into extraordinary with dry aged bacon and barbecue sauce that is caramelized by the broiler.

This recipe is made with Jones Dry Aged Bacon.

ingredients
1 (8 oz) package Jones Dairy Farm Dry Aged Bacon
2/3 cup milk
3 slices of bread, torn into pieces
2 pounds lean ground beef
3/4 cup parmesan cheese, grated
2 teaspoons steak seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons dried parsley, or
1/3 cup finely chopped fresh parsley
3 eggs, slightly beaten
1 cup barbecue sauce, divided
DIRECTIONS
Cook bacon in 325˚F oven for approximately 30 minutes, or until cooked to desired crispiness. Remove from oven and drain on paper towel lined plate. Set aside 7 slices and crumble remaining.

 In large bowl, pour milk over bread pieces, mix slightly, and allow to soak for 5 minutes. Add ground beef, cheese, crumbled bacon, seasonings and herbs, and eggs. Mix until well blended.

Fold a sheet of aluminum foil into a rectangle, 7”x16”. Shape meatloaf in center of rectangle to approximately 6”x7”. Layer reserved cooked bacon slices across top of meatloaf. Brush 1/2 cup barbecue sauce on top.

Put trivet into Instant Pot and add 1 ¾ cups water. Place meatloaf on foil on top of trivet. Fold ends of foil over to ensure Instant Pot will seal properly. Lock lid in place and choose “High Pressure” setting and 30 minutes cook time. When timer beeps, do a quick pressure release using a wooden spoon. Check internal temperature of meatloaf to ensure it has reached 155˚F. If not, lock lid and cook for a few more minutes.

Once meatloaf is cooked and pressure is fully released, remove meatloaf from Instant Pot and place on broiler pan or baking sheet. Brush remaining barbecue sauce over meatloaf and broil in preheated oven for approximately 5 minutes, or until sauce starts to caramelize. Watch closely as to not burn.

Remove from oven and let rest 5 minutes to seal in juices. Slice and enjoy with a side of mashed potatoes and vegetables of choice.
