Adding Guinness to both the burger and the BBQ sauce is a real treat. The beer in the BBQ sauce provides a richness and a slight bitterness which pairs perfectly with the sweetness of the molasses. Blending in a little to the sausage mixture creates a malty sweet layer of flavor to the pork.

This recipe is made with a Jones All Natural Roll Sausage.

ingredients

Homemade Barbecue Sauce
3/4 cup Guinness (or your favorite stout or black lager)
3/4 cup ketchup
1/2 cup molasses
2 tablespoons brown sugar
2 tablespoons apple cider vinegar
2 tablespoons freshly squeezed lime juice
1 tablespoon Worcestershire sauce
2 teaspoons garlic powder
1 teaspoon onion powder
3-4 drops hot sauce or sriracha
1/2 teaspoon salt
1/2 teaspoon pepper

Sliders
1 Jones All Natural Jones Pork Sausage Roll
2 teaspoons Dijon mustard
1/4 cup Guinness 
3 cloves garlic, minced
1 large egg
3/4 cup panko bread crumbs
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
3 slices Gouda cheese, cut in half
6 Pretzel dinner rolls
Toppings of choice: sliced tomato, spinach, pickles, etc.

DIRECTIONS
Whisk all barbecue sauce ingredients together in a medium saucepan and bring to a boil.  When it starts to boil, reduce heat to medium low and simmer for 20-25 minutes, until sauce has thickened.  Turn heat off.  It will continue to thicken as it cools.  

While barbecue sauce cooks, prepare sliders.  Combine pork sausage, mustard, beer, garlic, egg, bread crumbs, salt and pepper.  Mix with your hands until well incorporated.  Form into 6 small patties.   Drizzle olive oil into skillet and heat to medium-high.  Add patties and cook 4-5 minutes, until a golden brown crust is formed.  Flip burgers and cook an additional 4-5 minutes, or until internal temp reaches 160 degrees.  Add Gouda (or cheese of choice) during the last 2 minutes of cooking.  

Remove patties and keep warm.  Add buns to the hot skillet, cut side down, and toast for 1 minute.  

Build the burgers using barbecue sauce, sliders, and desired toppings.
