Ingredients:
1.25 lbs lean ground beef
1 (12 oz) Jones Dairy Farm All Natural Pork Sausage Roll, thawed
2 (8 oz) packages of Jones Dairy Farm Dry Aged Bacon
1 tablespoon Worcestershire sauce
1 shallot, finely minced
1 teaspoon garlic powder
8 slices cheese of your choice
8 pretzel buns or hamburger buns of choice
1 (2.8 oz) can of French fried onions
Salt and pepper, to taste
Lettuce and tomato, optional
Burger Sauce:
1/2 cup mayo
1/2 cup hickory bbq sauce
1 teaspoon ancho chili powder
Dash of Worcestershire sauce
DIRECTIONS
In a small bowl, mix burger sauce ingredients and keep in refrigerator for 30 minutes to allow flavors to develop.
In a large skillet, cook 8 slices of bacon and set aside. Chop remaining slices of bacon and add to skillet, cooking until almost crisp. Set aside, reserving 1 teaspoon of bacon fat in skillet.
In a large bowl, mix ground beef, sausage, chopped bacon, 1 tablespoon Worcestershire, shallot, garlic powder, and salt and pepper. Divide into 8 patties and form into rounds slightly larger than the buns (burgers will shrink slightly). You can also do this step ahead of time, and keep burgers in the refrigerator with wax paper sheets between each burger.
Heat a second skillet to medium heat (or your grill to 350 degrees F). Grill burgers on one side, 4-5 minutes. Flip and grill an additional 3-4 minutes (depending on the thickness of your burgers). Add cheese and cook an additional minute to melt cheese. IMPORTANT: Because this recipe contains ground pork, your burgers must be cooked to an internal temperature of 160 degrees F.
While burgers are cooking, toast your buns, if desired, either on the grill or in a 350 degree F. oven for 2-3 minutes.
In the skillet with the reserved bacon drippings, heat the French fried onions over medium heat to crisp and warm, about 2-3 minutes, stirring occasionally.
To assemble the burgers, spread burger sauce on the bottom bun. Layer lettuce and tomato (if desired), burger, 1 bacon strip (cut in half), another dollop of sauce, french fried onions, and top bun.
Alternately, you can wrap the burger and toppings inside a large lettuce leaf for a lower carb option.
