Packed with fresh spinach, sausage and eggs, this protein-packed breakfast sandwich is the perfect way to start your weekend.

This recipe is made with Jones Golden Brown® Mild Patties.

ANGB Pork Patty 7 oz
ingredients
1/2 cup cheddar cheese, shredded
2 cups preferred dry waffle mix, prepared as directed
Handful baby spinach
4 Jones Dairy Farm All Natural Golden Brown Sausage Patties
1 tablespoon butter
4 eggs, beaten
1/4 cup milk
3 tablespoons chopped fresh herbs (rosemary, sage, thyme)
DIRECTIONS
Combined cheddar cheese and prepared waffle mix. Make 8 mini waffles according to waffle maker directions. Each waffle should be about half the size of a normal waffle. Set aside; keep warm in oven if desired.

Place sausage patties in small skillet over medium-high heat and cook until browned and warmed through. Set aside and wipe skillet clean.

In same skillet melt butter. Combined eggs, milk and herbs. Add to skillet with melted butter; scramble with spatula until eggs are fully cooked.

Place a few spinach leaves on top of waffle, then sausage patty and generous spoonful of scrambled eggs. Top with another waffle and serve immediately.
