DIRECTIONS
Heat panini press or indoor grill (alternatively, you can grill the sandwich in a covered skillet and then flip to brown both sides while cooking).
Peel pear, slice in half and scoop out core, and then slice each half lengthwise to form flat pieces to be grilled. Place on heated panini press and grill for 2-3 minutes, or to your desired softness.
While pears are grilling, butter 4 slices of bread.
To build your sandwiches, layer:
1 piece of bread, butter side down on a cutting board
2 slices of Canadian bacon, side by side
Slices of Brie cheese
Arugula
Pear slices (when finished grilling)
2 slices of Canadian bacon, side by side
Spread fig jam on non-buttered side of second piece of bread, and place jam side down
Place sandwich in panini press and grill for 4-5 minutes, until cheese is melted and Canadian bacon is heated through.
Remove from panini press, cut in half and serve with a green salad or side of fruit.
