Bacon Avocado Deviled Eggs are a perfect for finger foods for that Sunday brunch.

ingredients
1 (8oz) Package of Jones No Sugar Dry Aged Bacon cooked and chopped 
12 eggs
2 avocados
¼ teaspoon ground cumin
½ teaspoon salt
1 Tablespoon shallots, chopped fine
2 Tablespoons lime juice
2 Tablespoons cilantro chopped fine
1 Tablespoon ancho chili powder
 
DIRECTIONS
Cook bacon according to package directions.  Reserve 1 tablespoon of bacon fat.

Place eggs in a pot and cover with 2 inches of water.  Bring water to a boil.  Cover and turn off the heat leaving the pot on the hot burner.  Let stand for 10 to 12 minutes.  Remove eggs and cool them in ice water.  Peal the eggs, cut them in half and remove the yolk. 

In a bowl combine the egg yolks, avocado, salt, half of the chopped bacon, shallots, cumin, cilantro, and lime juice.  Using a fork mash the egg yolks and avocado, mixing in the other ingredients.  Once the mixture is smooth and combined place in a piping bag (if you don’t have a piping bag, fill a ​plastic storage bag and cut a small hole in the bottom corner) and fill the egg halves with the mixture.  Garnish with the remaining bacon, cilantro, and ancho chili powder.
