These easy Sweet and Sour Chicken Meatball Skewers made with Jones Antibiotic Free Chicken Meatballs, fresh peppers, onions and pineapple, basted with a sweet and sour sauce and grilled to caramelized perfection are sure to be a summer BBQ hit. 

This recipe is made with Antibiotic Free Chicken Meatballs.

NAE Chicken Meatball
ingredients
3/4 cup (6 fl.oz.) pineapple juice
1 tablespoon soy sauce
1 teaspoon coconut sugar 
1 tablespoon cornstarch
1/2 cup water 
24 Jones Antibiotic Free Meatballs, thawed
4 mini bell peppers, halved 
2-3 small white onions, quartered
8 cubes pineapple
8 skewers 
DIRECTIONS
Combine the pineapple juice, soy sauce and coconut sugar in a small saucepan over medium high heat. Once the mixture comes to a low boil whisk in the slurry of cornstarch and water.

Bring the sauce back up to a low simmer until it thickens. This should only take about 1-2 minutes. 

With your skewer slide one meatball on with a quarter of onion, mini bell pepper half, and pineapple cube placed in between the three meatballs. Repeat with each skewer. 

Preheat your grill to 350 degrees F. Brush the sweet and sour sauce onto each skewer and place onto the hot grill. Grill each skewer until char marks appear on the pineapple, onion, and pepper and the meatballs are golden brown.
