Easy to make and freezer friendly too, this cold weather soup is truly perfection in one amazing bowl that’s sure to warm your spirits.
This recipe is made with Jones Golden Brown® Mild Links.
In a large soup pot or Dutch oven, sauté sausage pieces, carrots, celery and onion over medium-high heat until veggies are tender, approximately 3-4 minutes. Add butter, garlic and Italian seasoning and sauté for an additional 1-2 minutes, until garlic is fragrant. Sprinkle flour over vegetables and mix well. Slowly add chicken broth, stirring continuously. Add tomato paste and stir. While soup is simmering, heat heavy cream in a small saucepan. When hot, add cream cheese and whisk until smooth, then add to the soup pot. Add tortellini and continue to simmer for approximately 7 minutes (10 minutes if tortellini is frozen). Add spinach, stir, and allow to simmer for an additional minute. Season with salt and pepper to taste. Service with warm crusty bread, or top with seasoned croutons.

This is a perfect winter soup. I added more onion and cream cheese than the recipe called for, and served with Asiago bread bought from Panera Bread. Even with the spinach, my husband said this is a make-again recipe. Thank you!
